This coffee, from experimental coffee farmer Luiz Paulo Dias Pereira Filho, is a perfect example of the modern and innovative coffees we get so excited about working with. It is an Ethiopian Heirloom varietal from the Yirgacheffe region, grown at the Fazenda Santuario Sul test farm in Brazil, and processed using the new Hydro-Honey method. We just had to purchase it.

Hydro-Honey can be thought of as a combination of Natural and Honey Processing. The cherries are dried, then rehydrated, then de-pulped, then dried with the mucilage intact. The results are fantastic. This coffee is nutty, sweet, and citric.

Fazenda Santuario Sul is a 120-hectare farm, 80 hectares of which are planted in coffee. It's owned by Luiz Paulo Dias Pereira Filho, who is a fourth-generation coffee farmer and a cofounder of CarmoCoffees. Luiz Paulo is very curious about innovation through varieties and processing experiments, and he uses Santuario Sul as a kind of "test" farm for some of his idea.

Among the 30 varieties and cultivars grown there (which include Gesha) is this heirloom Ethiopian type called Yirgacheff, named for the region from which it likely came. The heirloom varieties and very high altitude contribute to the exceptional quality of the farm's coffee.
